Wheat usage by millers was steady throughout the period 1997 to 2008 when it increased slightly due to the commissioning of a new wheat starch plant. Flour production also changed little throughout that period as declining consumption of bread was in part compensated by a slight increase in the population.
Each year, British flour millers use approximately 5m tonnes of wheat. In the region of 85% of the wheat used by UK millers is grown in the UK. The remainder comes from Canada, the USA, France and Germany and is sourced for particular functionalities.
