Flour microbiology survey

Since 1971 nabim has run a survey of flour microbioloby. The data picks up any variations and members have the benefit of being able to cite the results in discussions with customers on microbiological specifications for flours.

The survey now tests a subset of samples for Shiga toxin-producing E.Coli (STEC). This is a dangerous microbe that has been implicated in food poisoning events in the United States linked to the consumption of raw flour – usually in the form of cookie dough. Monitoring this microbe will be important in demonstrating to customers and the food safety regulator that UK flour is safe.

The results of the survey will be available to nabim members by mid-November.
