Wheat

Whilst it is possible to make flour from many different types of grain, wheat is easily the most widely used.

This is because of the unique properties of wheat flour which allow the production of bread and other risen doughs.

UK flour millers use over 6 million tonnes of wheat per year, most of it grown in the UK, to produce over 5 million tonnes of flour.

This is used to make bread, rolls, cakes, muffins, crumpets, croissants, pastries, pizzas, biscuits, wafers, coatings, rusks, starch, confectionery, soups, sauces and many other foodstuffs.
